Homemade Lollipops
INGREDIENTS
- 1 cup granulated sugar
- 1/3 cup light corn syrup
- 1/4 cup water
- 1/4 teaspoon flavoured extract (e.g., apple, raspberry, lemon or any other flavour you can imagine)
- Food colouring (optional)
- Lollipop sticks
- Lollipop molds (optional)
- Cooking spray or vegetable oil (for greasing)
INSTRUCTIONS

Prepare a baking sheet lined with parchment paper. Lightly grease the parchment paper with cooking spray or vegetable oil. For molds, no greasing required.

In a small saucepan, combine the granulated sugar, light corn syrup, and water. Stir the mixture over medium heat until the sugar is completely dissolved.

Once the sugar is dissolved, stop stirring and insert a candy thermometer into the saucepan. Allow the mixture to boil without stirring until it reaches the hard-crack stage, which is around 300°F (150°C). This usually takes about 10-15 minutes.

Once the candy mixture reaches the hard-crack stage, remove the saucepan from the heat. Quickly stir in the flavored extract and food coloring (if using), mixing until well combined.

Using a spoon, carefully pour the hot candy mixture onto the mold or prepared baking sheet, forming circles approximately 2-3 inches in diameter. Leave enough space between each circle to insert the lollipop sticks.

Immediately place a lollipop stick into each circle of candy, gently twisting it to ensure it's fully coated in the candy mixture.

Allow the lollipops to cool and harden completely at room temperature. This usually takes about 15-20 minutes.

Once the lollipops are fully hardened, carefully remove them from the lollipop mold or peel them off the parchment paper and store them in an airtight container or wrap them individually in cellophane bags.
